Hello All!! So far, so good in the eating fruits and veggies department!! I am down 2 pounds and my energy level is feeling great!! My hubby and youngest have been doing great too! My oldest, not soooo much.. I am still working on him!! My meals so far have included a zucchini, onion, and mushroom Quiche, Nachos with ground turkey topped with cheese, onions, lettuce, tomatoes, avocados, green onions, and a bit of sour cream (this goes over well with the hubby). My youngest picked out the meat, avocados, and chips. My oldest, ended up eating quesadillas, tortilla chips, and applesauce..a girl can try!! 🙂 I have also been making this banana-peanut butter smoothie! OMG! It is to die for! I found a recipe on Pinterest, but I modify it a bit depending on what I have on hand. It curbs my sweet tooth, but it is still pretty healthy! I put unsweetened coco powder from Trader Joes, peanut butter, vanilla yogurt, vitamin D milk, ice, a splash of vanilla, and 1 banana and blend away in my Ninja blender!! Sometimes I even throw a little left over Espresso from my morning coffee into it for an extra zing of energy! This morning I ate Cheerios with the boys and added some bananas. So far so good! I haven’t decided on what is for dinner tonight. I may do white fish with a yummy veggie side. I think I will go on Pinterest and get inspired!! That’s all I have for today!
